Carefully harvested by us from the wild waters of Bellingham and Port Susan, Washington in August and early September. Each fish is hand-picked, vertically bled, floated and chilled in ice water immediately after harvest to preserve their salty freshness. Our daily Coho catch is hand-filleted, deboned, glazed, flash frozen and vacuum packed.
